Easter Weekend

Friday - I got off work early and thought it would be nice to make dinner and rent some movies so Greg and I can stay in. I went to Trader Joe's and picked up the ingredients for Gorgonzola Salad - spinach, candied walnuts, gorgonzola cheese and cranberry gorgonzola dressing. It was easy to put together, which I absolutely love. In addition to the salad, I picked up the Margherita Frozen pizza...that's another recommendation if you guys are ever interested in trying their pizza selection. Simple and good to eat since we had to fast for Good Friday.

At Blockbuster, I rented three movies: Invincible, Employee of the Month and The Holiday.

Here are my reviews of the three with 5 being the highest:

Invincible - 4 stars (great movie to watch and was inspired by a true story)

Employee of the Month - 2.5 stars (it was okay, I found myself to be chuckling in some parts of the movie)

The Holiday - 4.5 stars (I loved this one, it was absolutely charming!)

Saturday - In the morning, I drove out to Brea to meet up with Yajaira to go do our mud run training. It was also an opportunity to meet Vegas, her new llapso apso puppy of 2 months. He has the cutest face ever!!

Yajaira and I went to the park near her place and ran about 4 miles. It was killer in some parts since some of the hills were really steep! Yikes!

After the workout, I went to go hangout w/my Goddaughter. We went to have dim sum at a restaurant nearby and then went shopping at Del Amo mall. They renovated the whole mall and it's really nice now. Well, the outside part of the mall is nice. They have a lot of restaurants and sorta resembles the Santa Monica Promenade.

Once shopping was done, I went home to get ready for mass and spend time with my family. Thitam came by also to attend church with us! We had to wear our vietnamese dresses for this special mass. I must admit, it was kind of sad this year, first Easter without my two brothers.

Sunday - I went to mass again because I was scheduled to read that morning at mass. I honestly thought I was off the hook for Saturday night mass since I was scheduled to read, but of course that didn't fly with mom. After mass, we just hung around the house until lunch time and went to Pho So 1.

It was my parent's first time at Pho So 1 and it was kind of funny because they have 3 locations. Two in the valley and one in the Southbay area. When I came in the restaurant, the manager from the Reseda location recognized me and he asked, "So where do you live?" He was all confused, but I told him I came home for the weekend to visit my family. I found the Redondo location to taste even better than the others. Weird right? The menu is even more so extensive than the others as well!

After lunch, my parents and I just chatted and hungout around the house. They gave me my to go package of food for the week. I love it, I feel like I'm visiting from college every time I go home...haha. Then, I took off to Thitam's place really quick to spend a little time w/her family and wish them a Happy Easter! Their bbq was off the hook. Her mom makes the best Korean BBQ marinade!

I had no idea after having pho that I had room for 8 pieces of BBQ, but it's one of those things where you are not hungry and the food is so good, you just have to eat it? =) Her mom was so nice too! She gave a some BBQ to go also! So I think I'm pretty much set for the next 1 1/2 weeks and this includes lunch and dinner...lol.

Then, my trip back to Woodland Hills begins. Surprisingly, traffic was not that bad considering it was a holiday weekend. I got back in the Valley in about 40 minutes from the Southbay. When I got home, I started cleaning my bedroom and attempted decorating it a bit. It's still missing a little something, I'm thinking a plant. Oh wells, one step at a time.

This week is going to be pretty chill just hanging out and working out. Hopefully, I'll be able to catch up on some reading =)
